Lasooni Saag
A hearty and aromatic vegetarian delight, Lasooni Saag combines the wholesome goodness of leafy greens (saag) with the bold, rustic flavor of garlic (lasoon). Traditionally enjoyed in Nepal and North India, this dish is a simple yet soul-warming preparation that brings out the best in fresh, seasonal greens like spinach, mustard leaves, or a mix of local saag.
The greens are washed, finely chopped, and gently cooked until tender, then stir-fried with plenty of garlic — often both chopped and sliced — which is sautéed until golden and fragrant. A mild blend of spices like cumin seeds, turmeric, and green chilies adds warmth without overpowering the earthy taste of the greens. Sometimes a tadka (tempering) of mustard seeds, dried red chilies, or a dash of ghee is poured over the cooked saag to enhance the aroma and flavor.
