Chicken Kadai
Chicken Kadai (also known as Kadhai Chicken) is a popular North Indian curry made with succulent pieces of chicken cooked in a thick, spicy tomato-based gravy and aromatic spices. The name comes from the traditional Indian wok-style pan called a "kadai" in which it is cooked.
The dish features tender chicken pieces sautéed with bell peppers, onions, tomatoes, garlic, and ginger. It is generously flavored with whole spices like coriander seeds, cumin, and garam masala, giving it a bold and smoky flavor. The dry roasting of spices before blending into the curry gives Kadai Chicken its signature richness.
